Place the sweet potato in a saucepan of cold water and bring to the boil over high heat. Reduce heat to medium. Cook for 10 minutes or until softened. Drain, then return to the pan. Add butter and milk and stir with a wooden spoon until combined and smooth. Season with salt and pepper.
Meanwhile, combine the mince, parmesan, breadcrumbs, parsley and Italian dried herbs in a bowl. Season. Form the mixture into three flat rissoles.
Heat the oil in a medium saucepan over medium heat. Cook the rissoles for 4–5 minutes each side, until cooked through.
Serve rissoles with mash, broccolini, gravy and extra parsley.
