If you’re a gym-bro on the chicken, broccoli and rice train, then we’re here to tell you, it’s okay to add in a little extra. This korma-style curry uses all of your favourite ingredients and makes for the easiest protein-filled dinner.
If you’re feeling fancy for your me, myself and I dinner, then pop some flaked almonds and pappadums on top!

Step 1
In a large saucepan, melt butter on medium heat. Cook chicken for 4–5 minutes, until browned. Remove.
Step 2
In the same pan, cook onion and garlic for 2–3 minutes, until tender. Add curry paste and cook, stirring, for 1 minute, until fragrant.
Step 3
Stir in coconut milk, stock and tomato. Return chicken to pan along with broccoli. Bring to the boil. Reduce heat to low. Simmer, covered, 4–5 minutes. Season.
Step 4
Serve curry sprinkled with flaked almonds. Accompany with rice and pappadums.
