Method
- 750g pkt Zerella Fresh Baby Spud Lite, unpeeled, cut into chunks
- 2 Tbsp light whole egg mayonnaise
- 1 large garlic clove, crushed
- Finely grated zest and juice of 1 lemon
- Freshly ground black pepper
- 2 Tbsp finely chopped flat-leaf parsley
- 2 Tbsp finely chopped chives
Ingredients
- Put the potatoes in a large saucepan and cover with plenty of cold water. Cover and bring to the boil over high heat. Simmer for 10 minutes or until the potato is tender. Drain well. Transfer to a large bowl.
- Whisk the mayonnaise, garlic and lemon zest and juice in a small bowl. Season with pepper. Stir in the parsley and chives.
- Add the mayonnaise to the potatoes and toss to combine.
