Cook gnocchi according to the packet directions. Drain.
Meanwhile, heat the oil in a medium frying pan on high heat. Add onion and garlic. Cook, stirring occasionally, until soft. Add beef. Cook for 5 minutes or until browned, stirring to break up any lumps in the mince.
Stir in the tomato paste and cook for 30 seconds. Add tomatoes, Italian herbs and water. Bring to the boil. Reduce heat to medium. Season. Add vegetables and simmer uncovered for 2 minutes or until thickened slightly. Transfer to a wide, shallow 1 1/2-cup capacity ovenproof pan.
Preheat grill to high heat. Toss gnocchi with cheese and sprinkle over the Bolognese. Grill for 3–5 minutes, until the cheese melts and is golden. Serve with a mixed salad.
