Fragrant, comforting, and perfectly portioned, this Moroccan beef pilaf is made just for one. Tender spiced beef is simmered with fluffy rice, warm spices, and a hint of sweetness from dried fruit, creating a rich, aromatic dish without any leftovers to worry about.

It’s a simple, one-pan dinner that feels special but comes together easily, making it perfect for weeknights when you want something hearty, flavour-packed, and made exactly for you.

Step 1

Heat a medium frying pan on high heat. Add beef and seasoning. Cook, stirring to break up any lumps in the mince, for 4 minutes.

Step 2

Add onion. Cook, stirring occasionally, for about 4 minutes or until the onion is soft. Add beans and zucchini. Cook, stirring, for 2 minutes.

Step 3

Heat rice according to the directions on the packet.

Step 4

Add rice to pan with turmeric, stock and chickpeas. Stir. Cook, covered, on medium heat for 5 minutes or until zucchini and beans are tender. Season.

Step 5

Serve with yoghurt and coriander.
