Tip: If you love brown rice, but don’t like waiting the 30 minutes for it to cook, make your own microwave instant brown rice. Divide a batch of cooked rice into small snap lock bag portions and freeze.

In a large bowl, combine rice, breadcrumbs, eggs, bacon, capsicum, onion, soy and coriander. Mix well.
In a large frying pan, heat oil on medium. Working in two batches, add quarter-cups of mixture to the pan, plattening slightly. Cook 2-3 minutes each side, until golden. Drain on paper towel.
Serve drizzled with kecap manis and sprinkle with extra onion.
