Ingredients
Method
Heat oil in a stockpot on medium heat. Sauté carrot, onion, celery and beetroot until tender. Add white wine and vinegar. Simmer for 5–10 minutes, until liquid is reduced by half. Add garlic, chilli, ginger, turmeric and chicken. Add enough cold water to cover.
Bring to the boil, then reduce heat to medium and simmer for 30 minutes. Turn off the heat and let the broth sit, covered, for 20 minutes, until the chicken is cooked through.
Remove chicken from pot and place on a cutting board. Cool slightly then cut through the joints to separate the legs, wings and breasts .
Return broth to a simmer on low heat. Stir in the miso. Return chicken to the pot with the tofu and Asian greens. Warm through. Serve with soy sauce and white pepper, to taste.
