Whip up a batch of corn fritters for breakfast, lunch or dinner, they’re super speedy and simple to prep. Or pair them with a bacon and radish salad for an easy and healthy weeknight meal.

To make the salad, simply combine finely slice strips of crispy bacon, radishes, cherry tomatoes and red onion and toss together with basil leaves, lemon juice and olive oil.

Put flours, baking powder, spices, salt, egg and milk in a large bowl and whisk until smooth. Add shallot, mint and corn kernels and stir until well combined.

Heat oil in a frying pan over a medium heat. Add heaped tablespoonfuls of mixture to pan and cook, in batches, for 2 minutes on each side or until golden and firm. Serve with bacon and radish salad.
