Method
Preheat oven to 140C fan-forced (160C conventional). Line a large oven tray with baking paper.
Toss all the nuts in a large bowl to combine.
In a small bowl, whisk egg white and water together for 2 mins until frothy and foamy. Pour mixture over nuts. Add caster sugar, brown sugar and cinnamon. Toss well to coat nuts evenly.
Spread nuts in single layer on tray. Bake 25-30 mins, stirring often, until evenly crisp and caramelised (nuts will firm on cooling).
Cool on trays before breaking up into clusters. Store nuts in an airtight container at room temperature up to 1 month.
