Craving a refreshing yet satisfying meal? This sticky salmon bowl recipe with cucumber mint salsa is the perfect combination of savoury, sweet, and zesty.

The salmon is glazed in a rich, sticky sauce that caramelises beautifully, while the cucumber mint salsa adds a cool, vibrant crunch. Whether you’re looking for a light dinner or a deliciously filling lunch, this dish is packed with flavour and fresh ingredients that will leave you wanting more!

Step 1

Thinly slice onion into rounds. Place in a small bowl with red-wine vinegar and a pinch of salt. Mix to combine, then set aside to pickle.

Step 2

Preheat oven grill to high. To make marinade, combine honey, lime juice, chilli, garlic and smoked paprika in a food processor and process until finely chopped. Place in a bowl. Add salmon fillets and toss to coat. Place salmon on an oven tray lined with lightly greased foil. Spoon over marinade.

Step 3

Place tray in middle rack under the grill and cook for 10–15 minutes, or until salmon is caramelised and just cooked through. Remove from oven, loosely cover with foil and set aside.

Step 4

Mix cucumber, mint, coriander, extra lime juice and oil in a bowl. Season. Add lettuce and toss to coat.

Step 5

Heat rice following packet instructions. Divide rice and salad between bowls. Top with salmon, pickled red onion and cashews.
