Air-fryer BLT salad with roasted tomato dressing

We’ve created a fresh, flavourful BLT salad with a twist and even better: it’s cooked in an air-fryer!

Packed with crispy bacon, tender greens, and the irresistible flavour of roasted tomatoes, this air-fryer BLT salad is a fun and healthier spin on the classic BLT. The homemade roasted tomato dressing adds a savoury punch that ties everything together, making this salad a deliciously satisfying meal for any time of day. Perfect for light lunches, quick dinners, or a side to impress your guests!

Ingredients

ROASTED TOMATO DRESSING

Method

Step 1

Preheat air fryer to 200°C. To make the dressing, in a small roasting pan (that fits in the air fryer), combine tomatoes with oil, vinegar and lemon zest. Season. Cook 6–8 minutes or until caramelised and tender. Let cool.

Step 2

Meanwhile, tear bread, then toss with oil, garlic and parmesan. Add to air-fryer basket with bacon. Cook 6–7 minutes or until golden and crisp.

Step 3

Place cooked dressing ingredients in a blender with Tabasco, lemon juice, mustard and honey. Blend until smooth. Season and set aside.

Step 4

Combine lettuce and truss tomatoes in a large bowl. Add half the croutons and half the dressing, then toss to combine. Divide between bowls. Top with bacon, avocado and croutons and serve with remaining dressing.
