Chicken and lettuce cups are the perfect substitutes for something light and refreshing. Add in bacon, and an air fryer, and you’ve got a crispy, easy to make and delicious hor d’ouerve.

Combine breadcrumbs, parmesan and garlic powder in a medium bowl. Season. Lightly beat egg in a shallow bowl. Put flour on a plate. Season. Dip chicken in flour. Shake off excess. Dip in egg, then in breadcrumb mixture, pressing to coat. Transfer to a tray. Cover. Refrigerate for 15 minutes.
Preheat air fryer to 200°C for 3 minutes. Spray chicken with olive oil spray. Arrange half the chicken in a single layer in air fryer basket. Cook, turning once, for 12–15 minutes until cooked through. Transfer to a plate and cover. Repeat with remaining chicken.
In 2 batches, cook bacon in a single layer in air fryer, turning once, for 4 minutes or until crisp.
For dressing, combine all dressing ingredients in a screwtop glass jar and shake. Season.
Arrange lettuce cups on a platter. Top with pickle and eschalot. Drizzle with half the dressing. Cut chicken into strips and roughly chop bacon. Divide among lettuce cups and serve with remaining dressing.
