Method

Step 1

Preheat oven to 190°C/170°C fan-forced. Line a large oven tray with baking paper.

Step 2

Combine oats, cranberries, coconut, apricot, seed mix, almonds, sesame seeds and cinnamon in a large bowl. Make a well, then add honey and coconut oil. Mix until well combined.

Step 3

Press mixture out onto prepared tray until 1–1.5cm in thickness. Bake for 25–30 minutes or until browned. Cool on tray until firm. Turn slice onto a wire rack lined with baking paper.

Step 4

Place chocolate in a small, microwave-safe bowl. Microwave on HIGH (100%) for 1 minute or until melted and smooth. Spread chocolate over slice. Refrigerate for 20 minutes or until chocolate has set.

Step 5

Cut slice into shards. Store in an airtight container in a cool dry place or in the fridge.
