Make these easy pulled pork tacos in the slow cooker

Your pulled pork tacos will be the talk of the town after you make these for your family. Or, better yet, make it in advance and serve it up for your next dinner party.

Think slow cookers are just for hearty stews in winter? Think again! Put your favourite appliance to good use in the warmer months too. No need to turn the oven on for hours for meltingly tender pork, let it cook away in the slow cooker without heating up your whole house. 

To make this recipe, all you need to do is throw in your pork, herbs and spices and let the slow cooker do all the work. Depending on your slow cooker capability, you can put this on for 8 hours on low or 4 hours on high. Then, chop up cabbage and carrots for a pickly slaw to add on top.

Finally, pile your tortilla as high as you like with all of your favourite taco toppings!

What’s in this pulled pork tacos recipe

  • Pulled pork: made in the slow cooker with barbecue sauce, paprika and lots of other herbs and spices, it will melt in your mouth by the end of the cook.
  • Tortillas: the only rule to follow with tortillas is to make sure you heat them up! No matter whether they’re store-bought or homemade, they definitely need some toasting
  • Pickly slaw: made with cabbage, carrot and lots of vinegar, this adds a sharp freshness to your dinner.
  • Toppings: coriander is a must for tacos, but you can also add avocado or sour cream, depending on your preferences.

What you can add to your pulled pork tacos

This recipe has a cabbage slaw and a sprinkle of coriander to go along with your tacos, but you could also add the following:

  • Sauces: if you love a bit of spice, give your tacos a splash of Tabasco or habanero hot sauce.
  • Cheese: any crumbled cheese would work well with a pork taco. Or, if you love sour cream, pop on a dollop.
  • Avocado: whether you’re a fan of guac or just a couple of slices of avocado, you can do no wrong with this topping.
  • Pickles: pickled jalapenos or extra veggies in your slaw, like cucumber or radish, would go down a treat!

Prepping pulled pork ahead of time

Since it’s so easy to assemble and eat, these pulled pork tacos are perfect for bigger dinner parties. Making pulled pork the day before serving is an easy way to cut down on stressful cooking. You can then reheat as much as you need (or the whole thing!) in your slow cooker or microwave, and serve with your slaw and tortillas. Cabbage and carrot slaw can also be made ahead of time, and it will only make the pickle flavour that much brighter!

Method

Step 1

Trim stalk from the fennel and roughly chop the stalk. (Reserve fennel bulb and fronds for slaw later.)

Step 2

In a 4.5-litre slow cooker, place chopped fennel stalk, onion, garlic powder, paprika, chilli flakes, oregano, tomato, barbecue sauce, vinegar, sugar and water and mix to combine. Season. Finely chop stalks and roots of coriander and add to slow cooker.

Step 3

Add pork. Turn to coat in sauce. Cover with a lid and cook for 8 hours on Low or 4 hours on High, until meat is tender and can be shredded with a fork.

Step 4

Meanwhile, for the pickle slaw, finely zest and juice the lime. Place in a small bowl with honey, a pinch of salt and vinegar and whisk to combine. Thinly slice fennel bulb into strips and shred or grate carrots. Add fennel and carrot to pickling liquid and toss to coat. Set aside in fridge to pickle.

Step 5

Shred pork using two forks. Add cabbage to the pickle and mix well.

Step 6

To serve, divide mashed avocado among the tortillas. Top with slaw, pork and coriander. Sprinkle with chopped fennel fronds, if using.

What’s the best cut of meat for pulled pork?

The best cut of meat for pulled pork made in the slow cooker is boneless pork shoulder. This is because it holds enough liquid to break down over a slower cook without going dry. Pork tenderloin or chops are too lean to be used in the slow cooker.

Can I cook my pork from frozen?

You can cook your pork from frozen, but it will change the cook time, and take much longer in the slow cooker. It is best to let the pulled pork thaw in the fridge overnight before cooking.
