Place chicken in a bowl. Add the taco seasoning, garlic powder, paprika, lime zest, 1 tablespoon lime juice and oil. Season with salt and pepper and toss to coat. Marinate for 30 minutes.
Put red onion, pickling liquid and 1 teaspoon salt flakes in a bowl. Toss to combine. Set aside to pickle.
Preheat a barbecue or chargrill pan over high heat. In batches, grill tortillas for 30 seconds to 1 minute each side. Keep warm in a clean tea towel.
Add cobs of corn to grill and cook, turning, for 6–8 minutes, or until charred. Add chicken and cook for
8–10 minutes on each side, or until charred and cooked through.
Meanwhile, for green goddess guac, combine avocado, buttermilk, lime juice, chives and coriander. Mash with a fork until smooth. Crumble over feta and jalapenos and mix to combine.
Slice chicken. Slice kernels from corn. Divide green goddess guac between tortillas, top with lettuce,
corn and chicken. Serve with pickled red onion and extra coriander.

What goes with chicken tacos?
For a perfect meal with your chicken tacos, consider serving up some classic sides like Mexican rice and refried beans. If you’re after a bit of crunch, corn on the cob, either grilled or boiled with a little butter and chili powder is a great option. You can also never go wrong with fresh guacamole and tangy salsa on the side, or crispy tortilla chips for dipping. If you’re craving something with a bit more zing, have pickled vegies or for a lighter touch, grilled veggies such as zucchini and bell peppers.
Is chicken taco seasoning the same as taco seasoning?
While you can use regular taco seasoning on chicken, chicken taco seasoning might provide a more tailored flavour to suit poultry. If you’re in a pinch, using regular taco seasoning won’t hurt, it’ll still taste great!
How do you cut chicken breast for tacos?
To cut chicken breast for tacos, start by trimming off any excess fat, then pat it dry. Slice the chicken against the grain into thin strips or small cubes, depending on your preference. If the breast is thick, you can butterfly it first to make it thinner for quicker cooking. Once cut, season the chicken and it’s ready to cook up for your tacos!
