When life gives you stale bread, the first thing that comes to mind is making croutons. But croutons aren’t a meal. You’ll have to buy a cos lettuce, chicken and bacon to turn it into a Caesar salad. But with this recipe, you can help save food going to waste and make a filling and hearty meal.
You only need three extra ingredients which you already have in your fridge and pantry to make a bowl of this soft, chewy and heart-warming gnocchi.
Montana Hughes a contestant on season 14 of Masterchef Australia has shared her nifty gnocchi hack via Tik Tok. Going by the username @monmackfood, the home cook shares her version of gnocchi di pane or bread gnocchi.
All you need is 200g stale bread, 100g milk, one egg and about 50-75g flour.
- Start off by using a bread knife to cut the bread into cubes like you would for croutons.
- Then, in a bowl, pour the milk over the bread and break it down into crumbs with your hands and season.
- Crack the egg and mix with a wooden spoon or chopsticks.
- Finally, add flour to help form a soft dough.
- Flour a chopping board and roll out your dough into a cylinder shape. Then cut into bite-sized pieces with a knife.
- In a medium saucepan, boil some water and simmer the gnocchi until they float to the surface of the water.
- Transfer the cooked gnocchi to a pan of olive oil and herbs like rosemary, or pair with your favourite pasta sauce.
