How to transform stale croissants into delicious almond ones

Never go to the bakery hungry. You always end up with too much bread, and it will go stale in a few days. Sure, you can make gnocchi, breadcrumbs and Panzanella, but your options are limited when it comes to croissants.

WATCH: Almond Croissant Tik Tok Hack

In a video that has now gone viral on Tik Tok, Pastry Chef, Allison Chen reveals her secret hack to using up old croissants.

Currently based in the US, the Duke University student shared her expert tips which she learnt while working in a French bakery.

In the clip, Alison encouraged other users to have a go at using up their leftover croissants with her recipe, saying that “even if you burn them… it’ll still taste fantastic.”

“Now, anytime you see the word almond croissant or twice baked croissant on a bakery menu … [they’re] probably from the day before. So if you have some crusty Costco croissants that you haven’t eaten up you also don’t have to waste them.”

Allison’s easy recipe starts off by making a batch of almond cream.

Ingredients needed: Sugar, butter, an egg, almond flour and a simple sugar syrup.

Method:

  1. Measure out equal parts of sugar, butter, eggs and almond flour. *Alison used one egg.
  2. Cut your croissants in half, then brush the halves with a simple sugar syrup using a pastry brush.
  3. Next, pipe your delicious almond cream filling in over the sugar syrup layer, close the croissants like a sandwich, then top with more of the almond cream and a sprinkle of flaky almonds.
  4. Dust with icing sugar and serve.
