• 2 1/2 cups ruby grapefruit juice
• 1 cup pineapple juice
• Juice of 2 limes
• 1/2 cup sugar syrup
• 2 Tbsp grenadine
• 4 cups ice
• 1 lime wedge
• 2 Tbsp pink sanding sugar
• Extra 4-6 lime wedges, to garnish
• Pineapple leaves, to serve
• Pineapple chunks, to serve
Note: To make sugar syrup, put 2 cups each of sugar and water in a medium saucepan over a medium heat. Cook, stirring, until sugar dissolves, then simmer for 3 minutes. Remove from heat and set aside to cool completely.
Put juices, sugar syrup, grenadine and ice in a blender and pulse until smooth. Rub lime wedge around rim of martini glasses, then dip each in sanding sugar.
Cut a notch into extra lime wedges, then arrange on toothpicks with 1 pineapple leaf and 1 pineapple chunk.
Divide drink between glasses, then balance garnishes on rim to serve.
