We re-created the viral cucumber salad that everyone’s been obsessed with online. Not only does this salad take 5 minutes to whip up, but it uses foods you already have in your pantry. It’s delicious, simple and healthy.

Using a mandolin, thinly slice cucumbers into rounds (ensure you use the mandolin safety guard). Alternately, using a knife, thinly slice cucumbers into rounds.

Step 2

In a screwtop jar combine cucumbers, onions, garlic, soy, fish sauce, sesame oil, sugar and sesame seeds. Seal jar and shake to combine. Serve with extra sesame seeds.

What is the best salad cucumber?

In this recipe, we used Lebanese cucumbers which are a great option for salads. You do not need to peel them, all you need to do is chop it up and chuck it into your salad bowl. Lebanese cucumbers have a juicy texture and tender skin also perfect for pickling.
