Making your own hummus seems like a lot of effort, but this homemade hummus recipe is as simple as it gets. Get out a few pantry staples and your food processor, and whip up your dip in a flash. Pair with some crispy broccoli for a hearty snack.

Hummus is a spread or dip made primarily from 3 ingredients: chickpeas, lemon and tahini. With added spices and aromats, like garlic and paprika, hummus can be made in a variety of ways. This recipe uses garlic, parsley and broccoli stem to create a delicious homemade style hummus.

Step 1

Trim florets from broccoli and set aside. Cut stems into 1cm thick slices. Blanch broccoli stems and chickpeas in salted boiling water for 6 minutes or until just tender. Drain and refresh.

Step 2

Place broccoli stems, garlic, chickpeas, oil, lemon juice, tahini and parsley in a food processor. Season. Process 4 minutes, until very smooth. Place in a bowl and refrigerate.

Step 3

Preheat an air fryer to 180°C for 5 minutes (or 200°C/180°C fan-forced for oven). Place egg in a medium bowl with 1 tablespoon water and whisk. In another bowl, combine cheese, breadcrumbs and oil. Season. Add the broccoli florets to the beaten egg and coat well, then coat in the breadcrumb mixture.

Step 4

Air-fry broccoli for 10 minutes, shaking the basket occasionally, until golden and crisp. If using an oven, place broccoli in an even layer on a large baking tray lined with baking paper. Bake 15 minutes or until golden and crisp. Drizzle hummus with extra oil and serve with the crispy broccoli.

What is the correct spelling of hummus?

In Australia, both ‘hommus’ and ‘hummus’ are considered the correct spelling. ‘Hummus’ is usually the default spelling for Aussies. Other spelling variations include ‘hommos’, ‘hoummos’ and ‘hummous’.

What to serve with hummus

Hummus is the perfect choice for a crudite platter with lots of fresh vegies, like cucumber, carrot and radishes. Or simply serve with your favourite flatbread. If you want to add it in to your dinner, hummus can be used in a range of Middle Eastern cuisine dishes, including kebabs, shawarma or on fresh salads.
