Making your own flatbread pizzas sounds like a hard task, but in reality, it only takes a couple of minutes! After rolling out your dough, you’ve got your pick of toppings, whether that’s leftover veggies, cold cuts or a kitchen sink of every ingredient you love.
We’ve got two delicious summer flavour pairings for you to try with your flatbread pizzas, a bruschetta style and a peach, rocket and mozzarella. Which one will you try out first?

Preheat oven to 220°C/200°C fan-forced. Place two large oven trays in oven to preheat. In a large bowl, combine self-raising flour, yoghurt and salt. Mix until dough comes together in a smooth ball.
Divide dough into two balls. Roll each ball out on a lightly floured sheet of baking paper to a 30cm pizza round, sprinkling with more flour as needed. Spread passata over pizzas, leaving a 1cm border.
For the bruschetta pizza, top with mozzarella and garlic, then season. Carefully slide onto preheated oven tray and bake for 15 minutes, or until golden and the cheese is bubbling.
Meanwhile, cut cherry tomatoes into quarters. Place in a bowl, season with salt and pepper, then mix well. Add vinegar glaze and mix well. Serve pizza topped with bruschetta topping and fresh basil leaves.
For the peach, rocket and fresh mozzarella pizza, sprinkle base with sliced eschalot and oregano. Season. Carefully slide onto preheated oven tray and bake for 15 minutes, or until golden and cooked.
Meanwhile, cut peaches into thin wedges. Place in a bowl with rocket, pistachio, lemon juice and oil. Season and toss to combine. Spoon peach salad over pizza. Tear mozzarella and add to pizza, then drizzle with honey and grind over more pepper to serve.

What’s the difference between flatbread pizza and normal pizza?
The real difference between flatbread pizza and normal pizza is the yeast content. While flatbread is usually made without yeast, pizza dough requires a couple of tablespoons and some time to rise before being baked. Flatbread pizza is, essentially, a flatter version of normal pizza, and does not have the same crust to soft centre ratio. Pizzas are also usually made in a pizza oven, while flatbread is cooked on the stove or in the oven.
