Method
Place nuts in a food processor and process until finely chopped. Add coconut, raspberries, almond butter, maple syrup, chia seeds and vanilla. Process until smooth and combined. (The mixture will be quite sticky.)
Combine crushed strawberries with extra coconut in a bowl. Place level tablespoons of mixture on a tray lined with baking paper. Working with one ball at a time, toss in coconut mix and shape into a ball. Transfer to an airtight container and keep in the fridge.
