Preheat oven to 190°C/170°C fan-forced. Grease a 9cm-deep, 11.5cm x 20cm (base) loaf pan. Line its base and sides with baking paper.
Sift flours, ginger, cinnamon and bicarbonate of soda in a large bowl. Make a well, then add milk, maple syrup, eggs and butter. Mix to combine. Stir in banana, apple and carrot. Pour mixture into pan and level top.
Bake for 1 hour or until golden and cooked through. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
Slice loaf. It can be served fresh or toasted. Top with yoghurt, assorted fruits, seed mix, chia seeds, shredded coconut and maple syrup.
