This delicious apple and banana loaf will be your new go-to healthy snack!

It is a perfect blend of wholesome ingredients that is as tasty as it is nutritious. Packed with fibre, natural sweetness, and a boost of protein, it’s the ideal treat for breakfast, a mid-day pick-me-up, or even a guilt-free dessert. Topped with fresh, vibrant fruit, this loaf brings the perfect balance of flavour in every bite. It’s everything you want in a loaf – moist, flavourful, and packed with goodness!

Step 1

Preheat oven to 190°C/170°C fan-forced. Grease a 9cm-deep, 11.5cm x 20cm (base) loaf pan. Line its base and sides with baking paper.

Step 2

Sift flours, ginger, cinnamon and bicarbonate of soda in a large bowl. Make a well, then add milk, maple syrup, eggs and butter. Mix to combine. Stir in banana, apple and carrot. Pour mixture into pan and level top.

Step 3

Bake for 1 hour or until golden and cooked through. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Step 4

Slice loaf. It can be served fresh or toasted. Top with yoghurt, assorted fruits, seed mix, chia seeds, shredded coconut and maple syrup.
