Strawberry and lime cheesecake in a glass

One of the year's most-craved cook-ups, just as delicious the second time round!

Method

Use a small, sharp knife to remove zest and pith from limes. Cut out segments, then cut in half and put in a large bowl. Squeeze over juice from leftover lime carcass, then stir in strawberries and 1/4 cup of the icing sugar. Set aside.

Put cream cheese and 1/2 cup of the icing sugar in the bowl of an electric mixer and beat on high, using paddle attachment, until fluffy and light. Add 200ml of the cream and continue beating until well combined and fluffy. Set aside.

Put vanilla, remaining cream and remaining icing sugar in a separate bowl of an electric mixer and beat on high, using whisk attachment, until soft peaks form. Set aside.

4.

Finely dice lime jelly. Break biscuits into bite-sized pieces and put in the base of six 1-cup capacity glasses. Top with jelly, cream cheese mixture, strawberry mixture and a dollop of whipped cream. Serve with remaining cream on the side.
