Colin Fassnidge’s homemade spring pizza

An easy, budget-friendly way to enjoy pizza night.

Making homemade pizza dough is much easier than you think, especially when you use Colin’s 3-step instructions. Then, top up your dough with all the in-season veg and perfect spring pairings, like ricotta, mortadella and tarragon. It’s a match made in heaven.

These spring pizzas are perfect for making with the kids, or for when you’ve got friends over who love a hands-on dinner.

Method

Step 1

For the dough, combine water, yeast, sugar and 2 tablespoons of flour in a bowl. Whisk to combine. Set aside in a warm place for 20–30 minutes, until bubbles appear. 

Step 2

Place remaining flour, salt, yeast mixture and oil in the large bowl of a stand mixer with a dough hook attachment. Knead on low speed for about 3 minutes or until the dough is smooth and elastic.

Step 3

Lightly flour your hands and transfer dough to an oiled bowl. Cover and set aside in a warm place for 15–30 minutes, or until the dough has doubled in size. 

Step 4

Place dough on a lightly floured surface. Punch down to remove air. Divide dough into four equal portions and knead into balls. Transfer to a large tray lined with baking paper. Cover with a clean damp cloth and set aside in a warm place for 10–15 minutes.

Step 5

Preheat oven to 250°C/230°C fan-forced. Working with one portion at a time, roll out dough to the size of a dinner plate. Spoon on ricotta. Top with mortadella, peas and zucchini flowers (if using) or zucchini slices. Drizzle with oil. Season with salt and pepper.

Step 6

Carefully transfer to a lightly greased oven tray. Bake 12–15 minutes, until the crust is golden and puffed. Repeat with remaining dough and pizza toppings. 

Step 7

Serve pizzas scattered with lemon zest, pea shoots and fresh herbs. Serve with lemon wedges.

Chef’s tip:

You can use sliced green or yellow zucchini as a substitute for zucchini flowers.
