Gluten-free chocolate and pecan energy bars

If you’re coeliac or gluten intolerant, it can be difficult finding delicious snacks that don’t upset you. But with Ed’s delicious chocolate energy bars, you’ll never have to worry again. Whether it’s the chocolate, raisins or pecans, this energy bar has flavour in spades.

Ingredients

Method

1.

Preheat oven to 160°C fan-forced (180°C conventional). Line a 20cm square slice tin with baking paper.

Combine rice flakes, rice flour, raw caster sugar and spices in a bowl and mix well. Add pistachios and raisins, then mix again. Add 250g of the chocolate and mix to combine.

Put butter, maple syrup, juice, vanilla and salt in a small saucepan and bring to a simmer over medium heat. Cook until reduced by one-quarter. Cool slightly, then add to dry ingredients and mix in well. Press into prepared tin and bake for 25 minutes, until just firm to touch. Cool in tin.

4.

Cut into bars. Melt remaining chocolate and drizzle over bars.
