Tip: We suggest using tweezers to pick out the orange, carrot nose sprinkles. And, the choc-peanut cookies are quick and easy to make!
Ingredients
Method
Preheat oven to 175°C. Line 2 oven trays with baking paper. Put shortening and peanut butter in a large bowl. Beat with an electric hand mixer on medium-high speed for 30 seconds. Beat in caster sugar, brown sugar, baking powder, salt and bicarbonate of soda until combined, scraping down sides of bowl occasionally. Beat in egg, milk and vanilla until combined. Beat in the cocoa powder and as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.
Shape dough into 20 x 4.5cm discs, then place 5cm apart on prepared trays.
Bake in batches for 9-11 minutes or until edges of biscuits are just firm. Cool on trays for 2 minutes. Transfer to a wire rack to cool completely.
Line an oven tray with baking paper. Put cooled biscuits on prepared tray. Put vanilla-flavoured lollies in a medium microwavesafe bowl. Microwave on medium/50%, stirring every 30 seconds, for 2-3 minutes or until lollies are melted and smooth. Spoon melted lollies over each biscuit to resemble melted snow.
Add half a Peanut Butter Cup for a hat while coating is still tacky, then decorate with mini chocolate chips for eyes and orange sprinkles for carrot noses. If using icing to make faces, add it after ‘snow’ has set.
