Melt-in-your-mouth brisket is a breeze – you just brown and bake! The cola-flavoured sauce gives the roast a tasty twist, while serving it with fresh slaw and hearty potatoes rounds out your American-style feast.

Preheat oven to 130°C fan-forced (150°C conventional). Whisk cola, sauce, mustard and seasoning in a jug. Season brisket.
Heat oil in a large frying pan on medium. Cook brisket, fat-side down, for 5 minutes, or until browned. Turn brisket over. Cook for another 5 minutes. Transfer to a heavy-based roasting pan, skin-side up (see Cook’s tip, below). Pour over cola mixture. Cover pan tightly with foil. Bake for 4 hours, or until brisket is very tender.
Slice or shred brisket and drizzle with cola sauce. Serve with jacket potatoes topped with sour cream and chives, plus coleslaw on the side.
