Heat oil on medium. Sauté half each onion and garlic 2-3 minutes. Stir in tomatoes and water. Simmer 15-20 minutes until reduced. Season.Â
Heat remaining oil on high. Sauté remaining onion and garlic 2-3 minutes. Add mince and brown 2-3 minutes.
Add spinach and basil. Cool. Stir ricotta through. Lightly grease an 8-cup baking dish.
Spread 1/2 cup chicken mixture onto each pasta sheet, rolling to enclose. Place seam-side down in baking dish. Spoon tomato sauce over. Sprinkle with cheeses.
Bake 200C 35-40 minutes. Serve scattered with extra basil leaves.Â
