Chicken, spinach and tomato cannelloni

This pasta bake uses fresh, delicious, and budget-friendly produce for a winning combo. Add it to your weeknight rotation or save it for a special occasion, it’s sure to impress.

Method

1.

Heat oil on medium. Sauté half each onion and garlic 2-3 minutes. Stir in tomatoes and water. Simmer 15-20 minutes until reduced. Season.

Heat remaining oil on high. Sauté remaining onion and garlic 2-3 minutes. Add mince and brown 2-3 minutes.

Add spinach and basil. Cool. Stir ricotta through. Lightly grease an 8-cup baking dish.

4.

Spread 1/2 cup chicken mixture onto each pasta sheet, rolling to enclose. Place seam-side down in baking dish. Spoon tomato sauce over. Sprinkle with cheeses.

5.

Bake 200C 35-40 minutes. Serve scattered with extra basil leaves.
