Cook bucatini pasta according to packet instructions in a large saucepan of rapidly boiling salted water, until al dente. Drain well, reserving ½ cup of pasta cooking water.
Put butter in a large frying pan and melt gently over medium heat. Increase the heat to high and add the reserved pasta water. Boil rapidly for 1 minute. Season with salt and a very generous amount of black pepper.
Stir in the pecorino, whisking until the sauce has a creamy texture. Then add the bucatini and toss to coat well. Top with parmesan and parsley, then serve immediately.
