Broccoli, sausage and potato fritters

Bangers and mash but with a twist – both the sausage and potato have been combined with broccoli to make these delicious fritters.

Method

1.

Squeeze excess moisture from potato. Transfer to a bowl with broccoli, sausage, eggs, parmesan, flour and chilli. Mix well and season to taste.

Press ⅓ cups of mixture firmly into 8 rounds.

In a large frying pan, heat combined oil and butter on medium. Working in two batches, add fritters to pan, flattening slightly. Cook 3-4 minutes each side, until crisp and golden. 

4.

Serve warm or cold, with extra chilli.
