Chocky-caramel Christmas crack

This chocolate caramel Christmas crack will win over even the pickiest eaters. Made with a perfect combination of crispy salada biscuits, chocolate and caramel, they’ll make perfect gifts for loved ones.

Ingredients

Method

Step 1

Preheat oven to 180°C/160°C fan-forced. Line a 20cm x 30cm slice pan with two layers of baking paper, allowing 2cm overhang of paper. Arrange biscuits over base.

Step 2

Heat sugar and butter in a small saucepan on medium heat, stirring to dissolve sugar. Add cream and bring to a boil for 30 seconds or until thickened, stirring constantly. Pour over biscuits. 

Step 3

Bake 5–8 minutes, until sugar mixture is bubbling. Let cool completely.

Step 4

Pour melted chocolate over caramel, using a palette knife or the back of a spoon to smooth. Sprinkle with chopped pistachio and cherry. Set aside 1 hour to set. Break into pieces to serve.

You can use any dried fruit or nuts you prefer, just substitute with the same amounts.

What is Christmas crack made of?

Christmas crack is a dessert made of crushed biscuits which are coated in either toffee, chocolate, caramel or other preferred flavours. It gets its name from it’s deliciously satisfying crack once its set.

Why is my Christmas crack chewy?

The caramel topping needs to be set well and get to the stage where it is a hard crack, otherwise it’ll be chewy.
