Method
Preheat oven to 180°C. Line a 27 x 18cm slice pan with baking paper. Put butter, sugar and spices in the bowl of an electric mixer and beat on high for 3 minutes or until light and creamy. Add eggs and vanilla, then beat until smooth. Fold in flour gently.
Put macadamias, chocolate chips, caramel and marshmallow in a large bowl and stir to combine. Fold half this mixture into the batter. Press into the base of prepared pan, then scatter the remaining macadamia mixture on top. Bake for 35 minutes or until a skewer inserted in the centre comes out clean. Cool completely on a wire rack. Slice and serve.
Cook’s tipÂ
If your oven has a strong fan, the top of the slice may darken towards the end of baking. If so, cover with aluminium foil after 20 minutes.
