Green salad with chicken and green goddess dressing

If you’re in need of a fresh feast for dinner, then a green goddess chicken salad is what you need. If you love a crunchy and wholesome lunch, meal prep this salad into four servings to last you through the week!

What is green goddess dressing made of?

Green goddess dressing is usually made up of lots of green herbs, including parsley, chives and coriander, and an acid like lemon or vinegar. It also has a fat component, such as mayonnaise or avocado to make it creamy.

Method

Step 1

Place chicken, stock and peppercorns in a deep frying pan or saucepan. Add enough cold water to fully cover the chicken. Cover. Bring to boil over high heat. Reduce heat to low and simmer for 10 minutes. Remove from heat, cover pan, then leave for 10 minutes. Uncover pan and let chicken cool in the poaching liquid. Remove chicken from pan and shred with a fork.

Step 2

For the green goddess dressing, place all ingredients in a small blender. Season. Blend until smooth.

Step 3

Cook peas in a small saucepan of boiling water for 2 minutes or until bright green and tender. Drain well. Refresh under cold water.

Step 4

Arrange cabbage, salad leaves, avocado, cucumber and chicken on a serving platter. Sprinkle with mint and pistachios. Serve with dressing.
