Preheat oven to 160°C fan-forced (180°C conventional). Grease six 1½ cup capacity ovenproof ramekins with melted butter.

Follow Steps 2-7 of the sticky date cake recipe.

Pour batter into prepared ramekins and smooth surface. Put on 2 oven trays, then bake for 35 minutes or until cooked when tested with a skewer. Set aside for 10 minutes.

Meanwhile, follow Step 9 to make butterscotch sauce, adding 3 tsp instant coffee granules.

Serve puddings topped with vanilla ice-cream, tinned or poached pears and coffee toffee sauce.
