In August 2021, Arnott’s caused outrage by discontinuing their popular Lattice biscuits. While this biscuit is not necessarily a popular biscuit for eating on its own, it does feature heavily in dessert recipes across Australia.

Since then, Australian bakers have searched high and low for a suitable lattice biscuit substitute to use in their desserts.
All is not lost. Alternatives to lattice biscuits have been found!
If you’ve been missing your favourite slice recipes like this passionfruit swirl cheesecake slice, there’s no need to miss out, thanks to a suitable substitute found in your local Asian supermarket.
Known as Hup Seng sugar crackers, these delicate pastry-like biscuits have an eerily similar texture and shape, and they fit perfectly in a slice dish just like Arnott’s classic. They have a little more salty flavour than the classic variety. However, this can work perfectly with many of your slices.
Another fitting alternative found at Amazon or supermarkets is that of Julie’s Sugar crackers. Again, they’ve been reported to be slightly more salty than the original but meet the appropriate texture, flavour and shape requirements to suit your slice-making needs.
If you can’t find any of these helpful substitutes, another option involves SAOs. While SAOs are suitable in texture, they are missing the extra sweetness of the Lattice biscuits. To combat this issue, home cooks have tested an alternative that involves basting SAOs with a cooled sugar syrup and waiting for them to cool.
Whichever of these alternatives to lattice biscuits for the vanilla slice you use for substitution, while not the same as the original, will ensure that this and all of your favourite treats can still be created and served at your next morning tea or P&C cake stall.
