How to make cottage cheese

Cottage cheese, most notably referred to as ‘curds and whey’ in the popular children’s nursery rhyme Little Miss Muffet, is a surprisingly easy cheese to make at home from scratch. 

Full of flavour, this is a recipe you’ll make time and time again to add a hit of extra protein to your breaky. It’s also extremely versatile and pairs well with fresh fruit, or enjoyed as a savoury snack, smashed up with avocado on toast.

Combine milk and salt in a medium saucepan over a medium heat. Bring to the boil, then mix in lemon juice to allow milk to curdle. Sieve curds and let drain.

To serve, arrange on baguette toasts and top with roasted tomatoes and basil.
