‘What’s at the bottom of the fridge’ green pasta

Think you’ve got nothing in the fridge for dinner? Have another look because there might be a pasta sauce hidden somewhere!

Colin’s making a delicious green pasta sauce with broccolini, Swiss chard, baby spinach and loads of herbs…but really, whatever green veggies you have wilting in the bottom of your fridge will work well.

Ingredients

Step 1

Bring a large pot of salted water to the boil. Add broccolini, kale, celery and spinach. Cook for 30 seconds. Drain and immerse in ice water until cool. Drain again, then squeeze dry.

Step 2

Place greens, garlic, parmesan, half the almonds and 1/2 cup olive oil in a blender. Blend, adding more oil as needed, until smooth. Add lemon juice and season.

Step 3

Cook pasta following the packet directions. Drain. Add enough sauce to hot pasta to coat. Toss well.

Step 4

Divide pasta among bowls and garnish with herbs and goat’s cheese or parmesan.
