Colin Fassnidge’s green omelette takes green eggs and ham to a whole new level

Although there’s no ham in Colin’s spiced eggs recipe, this green omelette is perfect for a family weekend brunch. It looks fancy and elevated, but only takes 25 minutes in the kitchen!

Method

Step 1

For salad filling, place sprouts, rocket, mint, chilli and coriander in a large bowl. Add fish sauce, lime juice and nuts. Toss to combine.

Step 2

Place eggs, spices, chilli, garlic, ginger and coriander in a blender. Season. Blend until combined.

Step 3

Heat sesame oil in a large non-stick frying pan over medium heat. Pour in egg mixture. Using a spatula, pull the omelette’s outside into the middle so the mixture cooks evenly.

Step 4

When the base starts to set, cook, without stirring, for 1 minute. Do not overcook; eggs should still be soft.

Step 5

Spoon the salad filling onto the centre of the omelette. Using a spatula, fold the omelette over to enclose the filling and slide it onto a serving plate.
