Green beans with minced pork

If your green beans are a bit sad and wilted, this bean and minced pork combination will have them looking absolutely delectable. Pair with fresh chilli and a whole lot of coriander for a flavour-packed dinner.

Step 1

Heat half the oil in a wok on medium heat. Add beans. Stir-fry for 3–5 minutes, or until they start to soften and blister slightly. Remove from wok and set aside.

Step 2

Increase heat to medium-high. Add remaining oil and pork to the wok. Cook the pork, breaking up any clumps, until it is browned.

Step 3

Add onion, garlic and chillies. Stir-fry for 2–3 minutes or until fragrant. Reduce heat to medium. Add the sauces, sugar and pepper. Stir well to coat the pork.

Step 4

Return beans to wok and add water or stock. Simmer for 1–2 minutes or until beans are tender but crisp. To serve, scatter with coriander leaves.
