Charred lettuce with chicken, bacon and peas

Lettuce isn’t just for serving up in salads; it can also be cooked! This delightful combo of chicken, peas, and bacon works wonders with Colin’s crispy charred lettuce.

Method

Step 1

Heat the oil in a large, deep frying pan on high heat. Add the lettuce and cook until golden on one side. Transfer to a plate.

Step 2

Add chicken, skin-side down, to the same pan. Cook for 3 minutes or until golden. Transfer to a plate. Add onion, garlic, bacon and thyme to the pan. Cook, stirring, for 3–4 minutes, until onion is tender.

Step 3

Return chicken to pan with butter, water and bay leaves. Cover and simmer for 10–15 minutes or until cooked. Season.

Step 4

Scatter with peas and add lemon zest and juice. Arrange lettuce wedges over chicken in pan. Cover and simmer for a further 2 minutes. Sprinkle with parmesan and serve.
