The viral dumpling lasagne is 10x easier in the slow cooker

Let the layers cook over low, slow heat.

Lazy dumpling lasagne has blown up on social media. Instead of spending time folding dumplings into shapes, viral videos have shown how easy it is to just layer filling and wonton wrappers ‘lasagne-style’ and steam them all together. What if we said that we could make it even simpler than that?

This dumpling lasagne recipe is made in the slow cooker. This means that after making your filling and placing all your layers, you can leave it to cook over low, slow heat without checking on it. It’s warming, comforting and the ideal one-pot dish for a busier weeknight.

Method

Step 1

Lightly oil the bowl of a 5.5-litre slow cooker. Combine pork mince, green onion, ginger, garlic, sauces and oil in a bowl. Season.

Step 2

Dip eight wrappers, one at a time, in a small bowl of water and use them to line the base of the slow cooker, overlapping if needed. Spoon a quarter of the mince mixture over the wrappers, using the back of a spoon to level it in a thin layer. Repeat layering with wrappers and mince mixture, finishing with a layer of wrappers. Break up wrappers, if needed, to fit evenly in a layer.

Step 3

Combine stock and wine in a jug. Pour half over the lasagne. Cover with a lid and cook on HIGH for 3 hours, until wrappers are tender. Drizzle with remaining stock mixture halfway through the cooking time.

Step 4

To make the chilli drizzle, combine all ingredients in a bowl.

Step 5

Spoon half the chilli mixture over the hot lasagne. Sprinkle with sesame seeds and fried shallots. Serve with remaining chilli mixture, sliced green onion and coriander.
