Ingredients
Method
1.
Prepare the banana peels:Â Peel the bananas carefully, trying to keep the peels intact. Thoroughly wash the banana peels to remove any residue or dirt. Using a spoon, gently scrape the inside of the peels to remove any excess banana flesh.
2.
Prepare Marinade:Â In a mixing bowl, combine the soy sauce (or tamari), maple syrup (or honey), liquid smoke (if using), vegetable oil, smoked paprika, garlic powder, and black pepper (if using). Mix the marinade well.
3.
Marinate the peels:Â Add the banana peels to the marinade, making sure they are evenly coated. Marinate for at least 15 minutes up to 24 hours. For a more intense flavour, marinate them for up to 2 hours in the refrigerator, flipping them halfway through.
4.
Prepare a skillet: Heat a non-stick skillet or frying pan over medium heat. There’s no need to add any oil to the pan since the peels are already marinated with oil.
5.
Cook the peels:Â Once the skillet is hot, add the marinated banana peels in a single layer. Cook them for 2-3 minutes on each side, or until they become crispy and slightly browned. Keep an eye on them as they can burn quickly due to the sugar content in the marinade.
6.
Remove from heat:Â Once the banana peel bacon is done, transfer it to a plate lined with paper towels to absorb any excess oil.
7.
Serve and enjoy:Â The banana peel bacon can be enjoyed as a snack or used as a topping for salads, added to a vegan BLT or any dish where you’d normally use bacon.
