‘Tis the season for cherries and Fast Ed’s celebrating with a visit to an Aussie cherry farm to check out this delicious stone fruit in all its glory. Plus, he’s sharing a new take on cherry ice cream which is way easier to make than you might think. Served in waffle cones with hazelnuts, coconut and dark chocolate, you’ll want to make this sweet treat all summer long.

Method
Pit, stem and halve cherries, then combine half of them with caster sugar in a medium bowl. Set aside for 20 minutes to marinate.
Meanwhile, dice remaining cherries and mix with coconut in a medium bowl. Grate 50g of the chocolate, add to coconut cherries and mix to combine. Melt remaining choc and brush on inside and rims of cones. Dip rims in chopped nuts to make a top crust. Set aside until set.
Whip cottage cheese, icing sugar and vanilla in a large bowl with an electric mixer. Gently fold in marinated cherries.
Spoon cherry-choc mixture into cones, top with cottage cheese mixture and garnish with extra cherries.
