Ingredients

Note: Allow 30 minutes cooling

Method

1.

Heat butter and oil in a large frying pan over a medium heat until butter melts. Add onion and garlic and cook for 2 minutes. Stir in rice. Add lime zest and stock and bring to the boil. Cover, reduce heat to low and cook for 20 minutes or until rice is tender. Remove from heat. Spread out rice in a large dish. Set aside to cool for 30 minutes.

Stir through oil, soy sauce, spring onion, snow peas, noodles and coriander. Top with chilli to serve.
