Drawing inspiration from the ancient Japanese art of kokedama – growing plants in moss balls – to create this showstopping dish! The ball is made with lobster meat, cream cheese and prawns, rolled in chopped herbs, then ‘planted’ with more herbs. Serve with tiger prawns for a platter to talk about!
