Sometimes dessert doesn’t have to be heavy like a rich and dense mud cake. This platter of fruit salad drizzled in vanilla lime syrup is light and refreshing and will go down a treat with even the kids. Serve with panna cotta for a decadent treat.

Method
Put sugar, lime zest and juice and 65ml water in a small saucepan and cook over a high heat until sugar has dissolved. Remove from heat and set aside for 15 minutes. Transfer to a jug and refrigerate for 1 hour to cool.
Cut strawberries, pineapple, watermelon, peach and kiwifruit into small dice and put on a large serving platter. Scatter over berries. Serve fruit salad immediately drizzled with a little of the cooled syrup and remaining syrup on the side.
