Is there anything better than cake? How about a cake that’s easy to make? Karen’s latest recipe is a large flat slab of banana cake that’s easily baked in a tray and cut into large finger pieces or larger squares. Served with yoghurt or ice cream and an extra drizzle of maple syrup; this is simple to throw together and is super delicious.

Preheat oven to 160°C fan- forced (180°C conventional). Line a 25 x 30cm baking tray with baking paper.
Combine banana, eggs, oils, oat bran, vanilla, cinnamon, maple syrup and milk in a large mixing bowl and allow to sit for 15 minutes.
Sift baking powder and spelt flour into banana mixture and stir to combine. Pour into prepared tray. Sprinkle with berries. Bake for 35 minutes, until a skewer inserted in the centre comes out clean. Dust with icing sugar, drizzle with extra maple syrup and serve with yoghurt or ice-cream.
