Preheat a 2-slice jaffle maker. Combine the apples, sultanas and cinnamon sugar in a large bowl.
Put 2 pieces of pastry into hot jaffle maker. Top each with a quarter of the apple mixture and cover with a piece of pastry. Close lid and cook for 8 minutes or until pastry is golden. Remove from appliance and brush one side of each sandwich with a little butter and sprinkle over a little of the extra cinnamon sugar.
Repeat with remaining pastry pieces, apple mixture, butter and cinnamon sugar. Allow jaffles to cool for 2 minutes. Serve with ice-cream and caramel topping.
