Place watermelon and banana in a freezer-safe container and freeze for 6 hours or until frozen.
Meanwhile, preheat oven to 200°C/180°C fan-forced. Line an oven tray with baking paper.
To make popcorn crunch, combine honey and butter in a small saucepan on medium heat and bring to a simmer, stirring, to melt the butter. Place popcorn and coconut in a large bowl. Pour over honey mixture and mix to combine. Spread onto prepared tray. Bake for 10 minutes, or until caramelised. Set aside to cool.
For soft serve, just before serving, combine frozen banana, pineapple and coconut cream in a food processor. Process 5 minutes or until smooth, scraping down the bowl’s sides.
Spoon banana mixture into bowls. Using a microplane, grate the frozen watermelon over the soft serve (the rind end makes it easy to hold when grating). Serve immediately, topped with popcorn.
